This is a very simple roasted chicken, that you can get really creative with seasonings.

Ingredients

Directions

  1. NOTES:
  2. * For someone who is watching their sodium levels, Ms. Dash Table Blend is an excellent way to increase your flavor profile without adding additional sodium to your diet. You don't always need to add salt to have flavorful food!
  3. * Chicken provides an incredible flavor foundation due to its versatility and ability to absorb many different flavors. We have played around with Thai red curry powder, cajun seasoning (various), and BBQ rubs (try different types - be creative and experiment - I have yet to find one I haven't enjoyed on chicken).
  4. * So, be creative, have fun, and experiment with the seasonings!
  5. Directions:
  6. Set your oven temperature at 400, if you have a convection oven set it for 400 which will drop the temp to 375
  7. Foil a large baking sheet and coat with cooking spray - you don't want your chicken pieces to stick.
  8. On the baking sheet, place the chicken skin-side down.
  9. Pour half of the orange juice evenly over each piece of chicken.
  10. Season with black pepper, salt or garlic salt, and lemon pepper. Season generously with the table blend and Aleppo pepper flakes (this adds an extra flavor punch).
  11. Roast chicken for 15 minutes. Remove from oven and turn your chicken over (skin side up) and season again starting with the remainder of the orange juice. Roast for another 15 minutes and remove.
  12. Oven temps do vary, so, to check doneness, make sure your chicken is up to temp by using an instant-read thermometer. Chicken should reach an internal temperature of 165° Fahrenheit in the thickest part of the meat, but not touching bone.
  13. For crispier skin, move oven rack to the second from the top slot and switch to broil. Wait for a few minutes for the broiler to heat up and put the chicken back in the oven for 3 to 5 minutes. You will need to check it every minute to make sure the skin is not burning.
