American staple from childhood, Meat Loaf
**NOTE: This is low carb due to not using bread crumbs in the mixture.**

  1. Seasonings you can use:
  2. Dried parsley - 3 to 4 Tablespoons *
  3. Something spicy (tabasco, creole, or Cajun seasoning)
  4. Steak rubs - a blend of spices and seasonings
  5. ** Using a rub or seasoning blend can cut down on the number of individual spices you need to have on hand. Meatloaf can take bolder seasonings due to how bland ground beef can be.
  6. Pre-heat the oven to 425 F
  7. In a large bowl add all the ingredients except for the Ketchup. Using your hands, mix everything thoroughly together.
  8. In an oven safe baking dish, form the meat mixture into a loaf shape.
  9. With the back of a tablespoon, lightly glaze the Ketchup evenly over the surface of the meatloaf, top and all sides. (If you need a little more for a nice light coating, add a little more.)
  10. Bake for about 45 minutes or until the internal temp reaches 145-150 degrees.
  11. Sides:
  12. This will pair nicely with mashed potatoes, roasted veggies or steamed/sautéed veg and some brown gravy – (GV pouches of brown gravy are $0.40 per pouch).
  13. 5 lg bag of yellow potatoes - $3.78 (can be made into mashed potatoes, roasted potatoes, or baked.)
  14. 12 oz bag of frozen corn or mixed veg - $0.88 each for GV frozen veggies
  15. * = Staple seasoning to always have on hand
