As we all know, some people are not fans of leftovers, or having the same thing more than one night in a row for dinner. But the cost of everything is getting so much, we can’t afford to not use up all the meals we make. The key for this is getting creative with your leftovers!

If you are making the recipe for Pork Carnitas, we know that we can’t eat 3 to 4 pounds of pork in one night. Then the next night, you can take the leftover pork and heat it up with some BBQ sauce and have mock pulled pork sandwiches.

Hamburger Buns, toasted or not

Coleslaw – home made or from the store

Side of Fries, Baked beans, or whatever sounds good

Even after 2 nights you can’t use all your leftover pork, now the 3rd night you can take the leftover pork and cut it into half inch chunks and create pork fried rice.

Frozen Peas or mixed veggies

2 Eggs lightly beaten

Soy Sauce

Sesame oil

This will give you 3 completely different meals using the same main protein from night 1. This makes the leftovers feel like they are not leftover at all.

Using leftover ground beef from making tacos. You can make a cheese sauce using the Baked Mac and Cheese recipe and grab some pasta like elbows and follow the package for boiling.

Once your cheese sauce is made put your taco meat in it to heat up and get the flavoring in the sauce.

Put your pasta in an oven safe casserole dish and cover with the cheese sauce. Stir it all together and then top with crushed up tortilla chips and a little more cheese. Bake at 350 for 20 to 30 minutes until nice and bubbly and the chips are lightly toasted.

This now becomes Nacho Mac and gives you a couple more meals and great lunch leftovers.
